mashed potato and Ground beef Croquettes

We have lots of mashed potato from our lunch last Sunday so I decided to make a croquettes out of it by using lean ground beef.It is a lot of work and sometimes I ended up throwing away the first that I made.This time I made it just right,no waste.It is just our counter top was so messy coz of the potatoes and ground beef that fall from my palm.
You need to have enough patience when making this recipe,you have to handle it love and care(laughing).This is my favorite recipe when I am having my summer vacation in my mommy-lolas house in Manila.She really made it very delicious and the shape and thickness is perfect,I wonder how she did it.If you wanted to try it,here is the recipe:
  • Ground beef about a pound
  • mashed potato bout 6-7 pcs( just prepare it like you do with mashed potato but less butter)
  • 1 medium onion,sliced finely
  • 3 cloves of garlic,minced
  • 2 eggs,beated
  • breadcrumbs for coating
  • oregano just a pinch
  • salt and pepper to taste.

Directions:

  • put the ground beef in a wok and let it cook with its own oil.Remove and drain the excess oil.
  • Get a tsp of oil from the beef and sautee the garlic and onions.Mix the ground beef stir.Put some oregano,season with salt and pepper.Be sure that the ground beef is not too wet but not too dry.Cool it down completely.
  • Scooped some mashed potato and put it in palm,press it lightly.
  • When the beef is ready,put some on top of the mashed and covered.
  • Press lightly but with a bit a pressure,be sure that it is totally covered.
  • Dip into the eggs.
  • Roll in breadcrumbs and coat it perfectly.
  • In a frying pan heat some vegetable oil,in a medium heat.
  • Fry the croquettes until it is lightly brown.
  • Be sure you obtain that consistent heat of the oil so it will not break.
  • it is good with ketchup or with thousand island.Steam veggies is recommended if you want.

Beef Kaldereta,Little girl's request

My little cousin loves filipino dishes with the exception of sea foods due to her food allergy,beef caldereta is one of them,she loves the black olives and potatoes.Last time we made goat caldereta and she said that it wasn't the usual caldereta that she had tasted,she stated that the meat is "yucky",I told her it was goat and she dramatically said that goats are about to be extinct,silly girl. So last night,I made the beef caldereta,you can see from her face that she has really enjoying it,she hummed while eating and to see that kind of happiness in little girls face is really priceless.

If you would like to try it here is the recipe:

Ingredients:

pack of beef short ribs,sliced according to your wish. 4 medium potatoes,sliced into halves carrots,sliced how you wanted it. black olives drain green olives,drained 1 can of pineapple chunks,drained red and green bell pepper,sliced 1 small can of tomato paste 1 large bottle of ufc tamis-anghang banana ketchup onion,sliced thinly cloves of garlic,smashed or minced oil for frying salt and pepper to taste. Directions:
  • Put oil in a pan and saute garlic and onion til fragrant,add meat and brown each side,don't fry just brown.
  • Put enough water to cover the meat and bring to boil.Lower the heat til the meat is tender enough.
  • Add the tomato paste and ketchup,add some water if needed.
  • simmer then add the potatoes,carrots,black and green olives,plus the pineapple chunks.
  • Simmer until the veggies are cooked,add the green and red bell peppers.
  • Season with salt and pepper.
  • Serve with steamy rice.

The easiest Blueberry Muffin Ever

I have one pack of fresh blueberries in our fridge setting for almost a week,I asked if someone owns it and aunt said she just bought thinking that someone will eat it or make it into something.
I asked her if I can have it,my plan was to eat it fresh but while I was cleaning up in the garage I found an old cookbook and when I flipped the pages,I found a blueberry muffin recipe and the good thing is I don't need any tools aside from a FORK.yes,you read it right,just a FORK.
So without any second though I give it a try and this recipe is a keeper,and the batter you can make any kind of muffins just by adjusting some of the ingredients,isn't that great?
Ingredients:
1 cup fresh blueberries or 3/4 cup of thawed blueberries
2 cups sifted all-purpose flour
1/2 cup sugar
3-tsp baking powder
1/2 tsp salt
1 cup milk
1/3 cup vegetable oil or melted shortening
2 eggs
Procedure:
  • Preheat oven to 400 degrees.Grease bottom of muffin pan-cups,or line cups with paper liners.
  • Sift together flour,sugar,baking powder and salt into large bowl;set aside.
  • Combine milk,oil and egg;blend together with fork to mix well.Make a well in the center of flour mixture.
  • Pour in milk mixture all at once and stir quickly with fork,just until the flour disappears.
  • Do Not beat,batter will be lumpy.
  • Add 1 cup of fresh or thawed blueberries.
  • Fill muffin cups.Lightly sprinkle with sugar.

Chicken Leg Adobo

Adobo is one of my favorite Filipino dish,it can be pork,chicken,beef,or fish.Last night I made some chicken tinola and there were like 12 pcs of chicken legs left so I decided to make some adobo.I cooked it with a little bit of changes,i made the sauce thick and I browned all the sides of the chicken legs for a change.
I know that most of us Filipinos knows how to cook this kind of food,I would be surprise if someone will say that he/she doesn't know how=).Unless that person have no interest in cooking at all.So here is my Chicken Adobo.I had sauteed spinach as my side dish.Yuuuum!!!!and of course,with the thick sauce,you can eat it either with hot rice or mashed potato.

Here is the Procedure:

12 pcs of chicken legs

5 cloves of garlic,minced

1 medium onion sliced like ring

1/2 cup of soysauce

1/4 apple cider vinegar

3-tbsp olive oil

2-tbsp of brown sugar

pinch of salt and pepper

1/2 cup water

2tsps of cornstarch+1/8 cup of water(dissolved)

few drops of hot chili oil(optional)

Procedure:

  • Heat oil in a wok,brown all sides of the chicken .Removed and set aside.
  • Saute the garlic til it fragrant.
  • put back the chicken and simmer over medium heat for like 5 mins.
  • Add the water,soysauce and vinegar,simmer but don't stir.Remove the scum.
  • When it is boiling,add the brown sugar and taste.If you want to adjust the taste then season it according to your taste.
  • continue simmer until the chicken is cook.Add the cornstarch,bring to boil til it thickens.
  • Add the onion rings and cover the wok but turn-off the heat.
  • Since I like mine with a kick,I put few drops of hot chili oil.It is optional anyway.

Shrimp with chili Sauce

Last Tuesday aunt and some of her friends played Bun co in our place,they do it every 3rd Tuesday of each month and it was Tita Ds turn to host.She was worried what food to prepare for they are all Americans but we both know that they loved tita D's pancit bihon.She asked me if I can make some food just for additional aside what she gonna prepare.She made some pancit and Korean Beef.
I have no idea what to put in the table so I said I will just make some shrimp with chili sauce,I thought that it will compliment with the noodles or the beef,I didn't make it so spicy for the reason that they might not like spicy food.I just put some red and bell peppers to add some color.
To my surprise the visitors love it and they almost finished it.Of course,I wanted some for myself cause shrimp is one of my favorite seafood.Other lady asked the recipe,she is planning to make some for her husband for she said that her other half is a seafood lover and adventurous when it comes to food.I was happy and so with Tita D that they were not picky at all when it comes to food.

Here is the recipe if you like to try :

2 packs of shrimp(small size) deveined and shell off

1 red and green bell peppers,sliced into medium size or what ever you prefer

chili sauce( about 1 -11/2 cup)

onion,finely chopped

3 cloves of garlic,minced

3tbsp of olive oil

salt and pepper to add some taste

Instruction:

*Heat oil in a wok,saute the garlic and onion,add the shrimp and saute until it will be slightly pink.

*Add the chili sauce with a little bit of water just to clean up the cup ,bring to boil.

*Seasoned with salt and pepper then add the red& green peppers.Just simmer for 2 minutes.Don't overcook for it will make the shrimp hard.Half cook the peppers as well.If you like the bell peppers fully cook,just cover the wok.

Chicken Hamonado

Usually with this recipe most cooked this with a slab of pork with fats included,since I am not really a big fan of pork I decided to try chicken breast.The outcome was really good and it wasn't oily at all. Aunt D ate it and said it was really delicious and the left-over I used as a filling in my Sio-pao,i hope you would give it a try,I bet you would like the taste. By just looking at it,you would thought it is a chicken adobo but when you tasted it,you will find-out it is not....It is absolutely very easy to prepare. As always,I did my own estimation,so it is up to you how tasty you wanted yor chicken hamonado will be.

Ingredients: chicken breast or thigh

oyster sauce

soysauce

brown sugar

pineapple juice

crushed garlic

whole peppercorns

chopped onion

bayleaf

msg(optional)

Instructions:

Mix all the ingredients with enough water to cover the chicken.

Simmer until the sauce has thicken and almost dry. If you wanted more sauce just cook the

chicken thoroughly and thicken the sauce.

Be sure that the chicken meat is fork tender.

Serve it with hot rice or mashed potato.

Pickled papaya is the best side dish if you are eating it with hot rice.

I used the extra sauce for fried rice as well....it was very good.

Our Lunch(Tortang Alimango)

Aunt ordered some crabs from Maryland and we didn't finish it all,she told me if nobody wanted to eat it I can throw it away cause it makes the house smells,as I was staring at it,I feel bad just to put it in the trash can so I decided to remove the meat and made it into crab pattie. It was a tough job cause it is hard to remove all the meat in that regular size crab plus I wasn't even sure if Ican gather enough meat to make a tortang alimango(crab pattie).So with patience,i took one by one until everyhting is done,I was able to make 8 patties out of it and that was our lunch today.Just made a thousand island sauce for dipping.

The Shakoy....churros baya jud ni=)

Hello Jacsy,here is the recipe yadz....if you have a pastry bag the better but if wala don't bother just shape it according to ur likeness=). 1 cup water 1/4 cup butter 1 tbsp granulated sugar 1/2 tsp salt 2 eggs vegetable oil for deep frying For Toppings: 1 cup sugar ground cinnamon *in a medium saucepan combine water & butter and 1Tablespoon of sugar and the salt. *Bring to boil over medium heat.As the mixture comes to boil,add all flour at once& cook.Stirring until the batter comes together and away from the saucepan. *Remove from heat,let cool for 3 minutes.Add the eggs and beat with electric mixer until the dough well blended,the dough will be thick. *Pour enough oil in a deep fryer or wok(about 3 inches)and heat oil to 350 degrees. *Spoon dough into a pastry bag or just form it anything you wanted to,fry for about 4 minutes or until both sides are golden brown. *Remove from oil and drain on paper towel,then roll in a cinnamon and sugar topping.Enjoy....

BBQ Ribs

Finally i found the perfect sauce for my BBQ ribs,i like mine not too sweet and not too tangy...just right you know.. here is the mixture of my sauce: 3 tbsp of dry sherry 3tbsp of honey 3 tbsp of soysauce Jufran Ketchup Chilli sauce minced garlic 2 tbsp of grated ginger msg(optional) a slab of bbq rib Just marinate the bbq for 3o mins.Heat the oven in 350degrees.Baked it for like an hour so...Serve it with hot rice.

Osso Bucoo

I have been cooking lately since it is along week-end we decided to take turns to cook our food.Miggy made some pancakes for breakfast,i made the osso Bucco and for dinner aunt is making some open-faced sandwhich.
I just feel like posting this and for those who are interested for the recipe,one reminder..this food is not for those who are on diet.
