Puto -Ube with Cheese and With sweet Macapuno

(Puto with Sweet Macapuno)

Yesterday power was off for the whole day,it was still snowing but not that bad,it was cold because we have no heater at all but we survived.We played monopoly during the day and we gathered in the living room when the night falls,we talked and for me it was like we were bonding as a family.We slept all in the sala even our dogs.

Around 3 am,I woke up and glad that the power was back on,since I been resting for the whole day I decided to make some "puto-ube",everyone was still in their deep slumber.I made myself a cup of hot coffee and continued the preparation.
While waiting for the puto to be cooked,I found a jar of Sweet Macapuno in our pantry,I decided to mixed it with the remaining puto-ube mixture,I just steam it longer to be sure it will have a nice consistency.
I just made like 5 pcs of puto with sweet macapuno and when I tasted it,I love it,the texture and taste really goes together.So from now on,I will make some of puto with the mixture of macapuno for it gives a different taste from the usual puto.
Ingredients:
  • 1/2 cup ube powder
  • 1 cup all- purpose flour
  • 1/2 cup white sugar
  • 1 -1/2 tbsp baking powder
  • 1-3/4 fresh milk or coconut milk
  • cheese of your choice
  • 4 tbsp of sweet macapuno(optional and approxiamated)

Directions:

  • Mix flour,sugar and baking powder.

  • Add milk and mix until smooth.

  • Fill prepared puto cups 2/3 full.

  • Steam rapidly in boiling water for 20-25 minutes.

  • add cheese right away so it will melt.

  • Cool down before removing from the cups.

Ice Storm and Power Is Out

In my almost 8 years here in US of A,this is the worst experienced I have so far during winter time,way back in Ca,we seldom had snow .When we moved here in Ky 4 years ago I never thought that this would be happening. At first I love the snow,who doesn't anyway?Especiallyif it is your first time to see and touch a pile of snow in your own yard,I told myself how lucky I am to experienced this but after spending years here and experienced more snows I despise it,I hate it.I am not enjoying it anymore.For me it is too much!!! And today,we experience the unthinkable thing that would happen,we have ice storm,when I woke up this morning I though oh,it is just ice,but the moment I and my dogs stepped outside it was horrible,horrible that snow,I almost fell and my small dogs hit their face on the ground because it was too slippery.The power went off for the whole day,the trees were falling down everywhere,I guess there were problems in the main street. Now,I take back what said about hating the snow,I would rather have snow,no matter how many inches just don't give us icestorm,it is very scary and it caused so much damaged.I am hoping for a better weather in this coming days.Hopefully the sunshine will smile back once again.

Porkchop with a Twist...

It was snOwy yesterday and I decided not to go to work because Kat has no school due to the bad weather.I have a pack of porkoin Roast but I planned to make some stuffed bread.Since I have some left-over cause it was a lot to use as a bread filling,so I decided to make some porkchop with a twist,I used Taco Mix Seasoning instead of flour or breadcrumbs.
I just added some plain breadcrumbs cause said it was too spicy when I fried the first slice and give it to her.Since I like spicier I coated the porloin with just the Taco Mix Seasoning and it was so good.
Ingredients:
Slices of porkchops
1 pack of taco mix seasoning + 3 tbsp of plain breadcrumbs,mixed them together
some dried oregano
oil for frying
Directions:
*Wash the chops and dry it off with paper towel
*Rub the chops with dried oregano
*Coat the chops with Taco seasoning mix and Breadcrumbs,coat them well.
*Heat a frying pan with oil then fry the chops till its is brown.
*Drain with paper towel to remove excess oil.Serve with hot rice or baked potato with sourcream on top.
NOte: Just coat the chops when you will fry them.

Milk Fish with Sour Broth

I been dying to eat "tinolang bangus",but everytime I go to the Asian Store,I can't get a whole milkfish that is good for this recipe,this is one of my all-time favorite comfort food,I don't care if the fish is full of bones,I just simply love it.Period!!
Yesterday my aunt went to the city and she passed by a small asian store,there she found the fish that I been looking for,I already have the vegetables that I planned to put on it but the fish is the missing,when she told she got it,I told her "You are the best Tita",take note:Aunt doesn't eat this kind of food,the fact she is scared of this fish or any other fishes,she eat chosen fishes that she tasted and knew how to cook.
The moment she arrived,I got the fish and it was very "good-looking",fresh and firm.I cleaned it up and cooked.I have a very good lunch,Bossing ate some too.I have some left-over that I planned to bring tomorrow at work.With this food you have to eat it with rice.The "espadang sili"were kinda expensive so aunt just got one but big and it was good enough to gave the broth a spicy taste which I really liked.

Shrimp with chili Sauce

Last Tuesday aunt and some of her friends played Bun co in our place,they do it every 3rd Tuesday of each month and it was Tita Ds turn to host.She was worried what food to prepare for they are all Americans but we both know that they loved tita D's pancit bihon.She asked me if I can make some food just for additional aside what she gonna prepare.She made some pancit and Korean Beef.
I have no idea what to put in the table so I said I will just make some shrimp with chili sauce,I thought that it will compliment with the noodles or the beef,I didn't make it so spicy for the reason that they might not like spicy food.I just put some red and bell peppers to add some color.
To my surprise the visitors love it and they almost finished it.Of course,I wanted some for myself cause shrimp is one of my favorite seafood.Other lady asked the recipe,she is planning to make some for her husband for she said that her other half is a seafood lover and adventurous when it comes to food.I was happy and so with Tita D that they were not picky at all when it comes to food.

Here is the recipe if you like to try :

2 packs of shrimp(small size) deveined and shell off

1 red and green bell peppers,sliced into medium size or what ever you prefer

chili sauce( about 1 -11/2 cup)

onion,finely chopped

3 cloves of garlic,minced

3tbsp of olive oil

salt and pepper to add some taste

Instruction:

*Heat oil in a wok,saute the garlic and onion,add the shrimp and saute until it will be slightly pink.

*Add the chili sauce with a little bit of water just to clean up the cup ,bring to boil.

*Seasoned with salt and pepper then add the red& green peppers.Just simmer for 2 minutes.Don't overcook for it will make the shrimp hard.Half cook the peppers as well.If you like the bell peppers fully cook,just cover the wok.

Last Year for Marat Safin

I watched the game between Roger Federer and Marat Safin this morning and I was sad, I guess not only me but to all of his followers and fans.We know Safin as the man who doesn't back-out and give everything he had when it comes in playing tennis.He is not scared to voice out his opinion either it is solicited or not,he speaks his mind without fear.When he criticized something he said it in front of the press.He is a man who is brutally frank and true to his words.
He said last year that this year is his last year playing as a professional tennis player,we thought that he was just kidding but today after he lost to Federer,the commentator gave the news that Marat has made a decision that this will be the last time for him to play in Australian Open ,which he won few years back.In fact this is his last year.=(
He made history when he beat Pete Sampras in US Open when he was just 19 yrs.old.At that time Pete Sampras was the best tennis there was and the number one in the world.I will miss his scream,his gesture when he is mad,his temper and when he smashed his racket when he is really disappointed but all in all,I will miss him in tennis sport.He is one of the best out there at this time but he said he spent most of his life in tennis and it is time for him to do something else.
To Marat Safin,thanks for all those good times,good games you have shared with us.God Bless You.Your presence will be miss in the court,especially your very handsome face along with that killer smile of yours.

Chicken Hamonado

Usually with this recipe most cooked this with a slab of pork with fats included,since I am not really a big fan of pork I decided to try chicken breast.The outcome was really good and it wasn't oily at all. Aunt D ate it and said it was really delicious and the left-over I used as a filling in my Sio-pao,i hope you would give it a try,I bet you would like the taste. By just looking at it,you would thought it is a chicken adobo but when you tasted it,you will find-out it is not....It is absolutely very easy to prepare. As always,I did my own estimation,so it is up to you how tasty you wanted yor chicken hamonado will be.

Ingredients: chicken breast or thigh

oyster sauce

soysauce

brown sugar

pineapple juice

crushed garlic

whole peppercorns

chopped onion

bayleaf

msg(optional)

Instructions:

Mix all the ingredients with enough water to cover the chicken.

Simmer until the sauce has thicken and almost dry. If you wanted more sauce just cook the

chicken thoroughly and thicken the sauce.

Be sure that the chicken meat is fork tender.

Serve it with hot rice or mashed potato.

Pickled papaya is the best side dish if you are eating it with hot rice.

I used the extra sauce for fried rice as well....it was very good.

The fun Begins ...Australian Open

(Rod Laver Arena,Melbourne,Australia) Let the fun begin,fore me anyway,I have been waiting for the first grand slam of the year in tennis game and last night,I watched the first round game.All was struggling especially the top-seeded players and the qualifiers are eager to make their presence in the game that they are intimidated by the veterans.Of course,I know it is tough to put up a good game when the weather is pretty hot.

That's the complain of American guys who lost in the first round,they can't take the heat,well you can't blame them,just feel how cold in here but for andy Roddick and Mardy fish who advanced for the 2nd round this is the best time to play the sport that they love more than their lives,I guess.

I always wonder who will captured the most anticipating trophy this year?I wonder if Roger Federer will captured his number one spot back and tied up with Pete Sampras having a 14 career grand slam under his belt,maybe he will or maybe not.How about Novak Djokovic?Can he protect his title here this year?What about RAFAEL nADAL,who ended up Rogers Federer reign as the number tennis in the world last year when he beat Roger in Wimbledon last year?Will he reach the final this time?That is about to be seen in this coming days. To those who loves tennis like me,TUNE IN!!
